11:00-12:00 | The Dairy Industry Facing Inflation. Transferring the cultural and economic value of milk and cheese from the farm to the consumer: The word to the industry players. Promoted by B2Cheese in collaboration with Formaggi & Consumi | A round table among dairy industry players. A moment of discussion involving representatives from the farming sector, industry, and distribution, without forgetting the political world and the last link in the chain: the consumers. The debate will focus on the valorization of milk and its derived products from the farm to the shelf, and into the homes of Italians. The dairy sector is paying the price of inflation, and not only. Production costs have increased, shelf prices have risen, and consumption has slowed down. But in 2024, although there are significant uncertainties, inflation should slow down. Here are some questions to reflect on: What is the right price for milk, and how can the agricultural sector be supported? How can value be transferred along the supply chain? How do Italians perceive cheese and dairy products? And how can their cultural, social, and economic value be promoted in Italy and abroad? | Participants in the round table:
Moderator: Angelo Frigerio - Director, Formaggi & Consumi |

12:30-13:30 | The new frontier of Grana Padano PDO: the world’s first Blockchain-traced cheese wheel reaches tables globally. Promoted by Torre Pallavicina. | Two years after the project's official launch, Torre Pallavicina dairy presents the results of its program, which has created a complete 'passport' for this Made in Italy excellence. Through Blockchain technology, the entire journey of each cheese wheel—from field to barn, through aging and distribution, both in Italy and internationally—can now be fully traced. Validated on June 18, 2024, by Csqa, a leading agri-food certification body, the first fully Blockchain-traced wheel will be showcased at Torre Pallavicina's booth during B2cheese in Bergamo. Blockchain technology has allowed Torre Pallavicina to securely and immutably trace the entire Grana Padano supply chain, becoming the first dairy to provide real-time data, ensuring transparency, sustainability, and food safety for consumers. | Institutional Greetings: Alessandro Beduschi - Lombardy Regional Councillor for Agriculture Speakers:

14:30-15:30 | Sustainability is easy to discuss, but what are the merits and responsibilities of small-scale dairy producers? LoST-EU Project | A group of small Italian PDOs, part of the European LoST project, seeks to explore the role and responsibilities of dairy production in supporting their regions, local communities, and preserving cultural traditions, both past and future. Could these initiatives hold the key to fostering a dignified life in areas often seen as peripheral compared to urban and metropolitan centers? What drives these projects, largely born from the commitment of producers, local leaders, and stakeholders closely connected to their territories? And what are the contemporary challenges, especially as sustainability becomes more urgent, yet often treated superficially? |
Moderator: Paolo Confalonieri - professional journalist. He was the editor of the magazine Orobie. |
16:00-17:00 | ITS Academy Agroalimentare – A Pathway Through Industries and Production Promoted by the ITS Academy Agroalimentare Foundation | Products of the Dairy Supply Chain: A Conversation with Latteria Sociale di Chiuro and Latteria Sociale Valtellina. Guided tour of the B2CHEESE Fair, led by Sara Invernizzi, a collaborator with the Strachitunt Protection Consortium for research and communications. |
